Ingredients

Crab Bisque:

  • 1 lb. Aqua Star Chef's Blend Crab Meat
  • ½ yellow onion, diced
  • ½ bunch celery, diced
  • 1 tsp Spanish paprika
  • ¼ cup olive oil
  • 3 Tbsp whiskey
  • 1 Tbsp tomato paste
  • 2 cups heavy cream

Crab Croquettes:

  • 1 cup Aqua Star Chef's Blend Crab Meat
  • 1 egg
  • ¼ cup panko
  • 1 each lemon, zested
  • 2 Tbsp chives, chopped
  • 3 Tbsp mayonnaise
  • Pinch chili flakes

Breading

  • 1 cup flour, set aside
  • 3 eggs, combine with equal parts water
  • 1 cup panko, set aside

To make

Instructions

Crab Bisque:

Dice onions and celery, and sauté in olive oil over medium heat, along with tomato paste and paprika.

Heat whiskey in a small pot to burn off the alcohol, combine with sautéed vegetables.

Add ½ lb. of the crab and the heavy cream.

Bring to a boil, then blend bisque in a blender.

Add remaining crab to the hot bisque.

Crab Croquettes:

Combine all ingredients and form into small cakes.

Bread by tossing in flour, then egg mixture and last panko.

Deep fry at 350℉ until golden brown, roughly 30 seconds.

Serve bisque with croquettes and garnish with fresh herbs. Enjoy!

Serving Suggestions

Chef's Tip: Keep crab in vacuum pack and thaw overnight. Turn pack over and continue to refrigerate for several hours, turning occasionally. Juice from the real crab will coat the imitation crab, giving the entire product a real crab flavor.
