Ingredients
- 1 lb. Aqua Star Chefs Blend Crab Meat
- 2 ears corn, shucked and grilled
- 1 cucumber, grilled
- 1 Fresno chili, seeded and chopped
- 1/2 cup extra virgin olive oil
- 1 lemon, zested
- 3 stalks scallions, chopped
- Pinch Salt
- 1/2 cup fresh basil, torn
- 1/2 cup fresh mint, torn
To make
Instructions
Shuck corn and grill, let cool slightly and cut kernels off.Place the cucumber either directly onto hot coals or if using gas grill, directly onto flame. Char the outside of the cucumber as quickly as possible and let cool. Dice into cubes.
Slice Fresno pepper, scallions and add all remaining ingredients into a bowl.
Fold everything together and season with salt and lemon juice.
Serve with grilled bread, over rice, or toss onto a bed of greens. Enjoy!
